A Surprising Spin on a Family Favorite

Well, here’s the straight forward story: I had a package of ground chicken in my fridge that needed to be used. There is often ground chicken in my fridge, because it’s tasty, affordable, and versatile.

As it turns out, it is even more versatile than I realized and discovered tonight, with a little help from Pinterest. I typed “Ground Chicken Recipes” into the search and after some scrolling, I came across a recipe for pizza crust made with ground chicken. Say whaaaa?! Legitimately would have never thought to create pizza crust from ground chicken. After reading the recipe I realized I didn’t have everything that was called for on hand. However, I was inspired, so I decided to give it a shot with my own spin.

You guys, it FAR exceeded my expectations, as well as my family’s (let’s be honest they thought I had really lost my mind), and I will be adding this new treasure to the rotation. So without further adieu, I give you Craveable Chicken Crust Pizza.

Craveable Chicken Crust Pizza

For the Crust:

1 Pkg Ground Chicken

1 egg

1/4 cup high quality grated parmesan cheese (this is my favorite)

1/4 cup high quality shaved parmesan cheese (my favorite shaved version)

For the Toppings:

*Note: This part is really up to you– get creative with what you and your family love! The ingredients I list below are what I used in the photo above and I was using what I had in my fridge. I would have enjoyed some sliced Portobello mushrooms as well, they would’ve really put the flavor over the top!

1 Tbsp salted butter

1 Orange Pepper

1 cup halved, marinated artichoke hearts

2 Tbsp chopped garlic (I use Christopher Ranch)

1/4 sweet onion, chopped

8 pieces of bacon, cut up in small strips

2 cups of fresh tender spinach

3/4 bag shredded pizza cheese

Method for the Crust:

Preheat oven to 400 degrees.

In a mixing bowl, add your ground chicken, the egg, and the parmesan cheeses. Combine evenly. Transfer the chicken mixture to a large baking sheet covered with parchment paper. Spray your hands with a little bit of Pam or similar non stick cooking spray, and flatten the chicken into a rectangle (or round if that’s what you fancy) shape, till there is about 1/4 inch meat on all sides. Bake crust for 18-20 minutes, until slightly browned on the edges.

Method for toppings:

In a large, heavy bottomed nonstick pan, melt your butter. Add the onion, garlic, artichoke hearts, and orange pepper. Sauté until tender and fragrant, about 10 minutes. Add bacon to the pan, allowing to mix flavors with the veggies by cooking about 5 minutes more. Add fresh spinach and cook until just wilted. Remove from heat. Pile the topping medley onto your chicken crust and cover with the pizza cheese. Return to the oven for 8-10 minutes. EAT YOUR HEART OUT!
